PW's Holiday Bacon Appetizers

Ree made this recipe on her Food Network Show, Pioneer Woman. It's just 3 ingredients, and I had all of them in my cupboard....they were awesome!

I was pretty sure they would be.
Club crackers, Parmesan, and bacon? What's to wonder about?

The house smelled wonderful all day.

You need to give them a try!

Holiday Bacon Appetizers
PW

1 package Club Crackers
1 pound thin sliced Bacon
grated Parmesan cheese

Lay crackers face up on a cookie sheet.

Put 1 teaspoon of grated Parmesan cheese onto each cracker. Cut your package of bacon in half  and wrap each cheese covered cracker in one half piece of bacon, completely covering the cracker. It should fit snugly around the cracker.

Place the bacon wrapped crackers onto a baking sheet that has a rack on it.
Bake at 250 for about 2 hours

I made these a couple weeks ago. I had actually been at a party where someone had mentioned making these for another get together she had had. She raved about them and two other people who had also been at her get together raved about them too. Unfortunately, my hubby, my youngest daughter and I were very disappointed in them. They turned out rather dry (and I hadn't even baked them for 1 1/2 hours and they were done. I am wondering if I hadn't put them on the rack as the recipe states, if they would have been better since they would have baked in the bacon fat and would not have been so dry.

Hi!

They are not really wet at all, but dryer, more like a cracker. The bacon absorbs into the cracker, yum, and the bacon itself is chewy. Together they are awesome!
